Sesame Somen Noodles
Serves 8-10 people (as a side dish)
When I worked at Louie’s Backyard in Key West, we served a similar noodle salad with peanut butter. It was quite spicy, but I prefer this milder preparation – Rick Anderson
1 12 oz. package somen noodles
½ cup extra virgin olive oil
¼ cup toasted sesame oil
¼ cup rice wine vinegar
¼ cup shoyo or soy sauce
1 cup chopped scallions
½ cup of honey
¼ cup chopped cilantro
1 tbsp. sambal paste or siracha
¼ cup orange juice
½ cup toasted sesame seeds
8 oz. shiitake mushrooms
Cook somen noodles in salted water and strain. Cut shiitake mushrooms into strips (remove stems). Saute´ in 2 tablespoons of oil for 1 minute. Mix remaining ingredients in large bowl with a whisk. Toss noodles and shiitakes with dressing and serve at room temperature.
